I don’t eat eggs often, but when I do I purchase organic, usually Horizon or the omega 3 fortified brand carried by my supermarket. I believe I’m looking out for my health by avoiding the antibiotics rampant in the typical factory farm raised chickens, but can’t say I’ve noticed a difference in taste. This weekend at the Union Square Greenmarket the stand for Flying Pigs Farm caught my eye, not for the meat but for the eggs. I purchased 1/2 dozen for $3 as I had a taste for scrambled eggs. The first thing I noticed was the creaminess and thickness as I stirred the eggs, not the watery mix I was used to. The color was a dense yellow, which deepened upon cooking. The texture was substantial, spongy in a good way. I enjoy eggs but had no idea that what I was used to eating contained just a fraction of the possible flavor. What a pleasant surprise to have happened upon such a treat! The farm’s website is www.flyingpigsfarm.com, but doesn’t mention the eggs – I gather their primary business is the pork. I’ll definitely be going back – for the eggs, but also to learn more about the farmers and the chickens who produced them.
